Chicken Kabsa

Step by Step Recipe
Heat oil in a large pot. Add chopped onion and cook until soft and golden.
Add ginger garlic paste and cook for 1 minute.
Add chicken and cook until lightly browned on all sides.
Add tomato paste and spices. Mix well.
Pour in water or broth, add bay leaf and bring to a boil.
Reduce heat and cook chicken for 20 minutes.
Remove chicken, add rice to the broth and mix.
Place chicken back on top, cover and cook for 20 minutes until rice is done.
Garnish with cilantro and serve hot.
